Who doesn’t love a good casserole? It’s home cooking at its finest and the best comfort food around. BUT gluten-free dairy-free diet casseroles aren’t always easy to come by.
Most casseroles are loaded with gluten-filled noodles or dairy-filled cream topped with a heavy hand of cheese.
So I made it my mission with today’s recipe roundup post to prove that you DON’T have to eat your weight in cheese in order to enjoy a good casserole anymore.
You CAN still hold true to your gluten-free dairy-free diet and still enjoy comfort food at its finest.
It was interesting rounding up these recipes, because I found that so many of them used vegetables in place of noodles like spaghetti squash or sweet potatoes.
Honestly, the health coach in me was proud that we’ve come to a point where it’s considered normal to swap carb-heavy pasta for nutrient dense options instead.
And before you start scrolling, I do want to say a little “I’m Sorry” in advance for this post being so text-heavy.
Of course whenever I put together blog posts, I want them to be both pretty and full of useful content.
But the truth of the matter is that there just aren’t a ton of photos of casseroles out there that are free to use and aren’t showcasing gluten-filled noodles with cheese on top.
In order to stay true to what this blog is about, I decided less images would have to do this time. I hope you’ll forgive me.
