Pasta, whether fresh or dried, is quick-cooking (usually 11 minutes or less!), full of flavor, and makes an excellent meal on its own with the right sauce and maybe even some added protein or vegetables thrown into the mix.
Some of the most popular dishes in the United States have pasta in them. Foods like macaroni and cheese, spaghetti, fettuccine alfredo, and baked ziti all have different pasta noodles in them. While the types of pasta may vary, they’re all pretty similar in ingredients and flavor.
If you enjoy any of these dishes or have another favorite pasta dish, you may wonder how this ingredient can fit into a gluten-free diet.

What is pasta?
Pasta is a dish of noodles that originated in Italy. It is most typically made with semolina flour or durum wheat, water, and sometimes eggs. It is generally formed into dough, which is flattened into sheets and then shaped into different pasta shapes.
There are a ton of different pasta shapes available, all which work well with different types of sauces, like red sauce, cream sauces, pesto, and simply butter or olive oil.
Pasta is one of the most popular dishes in the United States with entire rows sometimes being stocked at grocery stores with a variety of different brands and shapes of pasta.
Pasta can be served on its own with sauce, as a bed for a protein dish, like chicken, seafood, beef, or pork. It can also be made into salads, like pasta salad, and casserole dishes, like baked ziti.
One of the best things about pasta is that it cooks up quickly. With fresh pasta taking between 2 and 5 minutes to cook, and dried pasta about 10 minutes or so to boil, it’s a no-brainer why this is such a popular ingredient to get dinner made quickly.
Some of your favorite comfort foods probably even include pasta: spaghetti and meat sauce or meatballs, mac and cheese, angel hair pasta and marinara sauce, or pesto and gnocchi. So many popular dishes use pasta as a main ingredient.

What are the different types of pasta?
There are so many different types of pasta that it was hard for me to figure out all of them to share here in this post. Here are some of the different types I was able to round up and share with you.
This list isn’t complete, so know that there are probably dozens more types of pasta out there, but I capped my list at just over 30.
Many of the types of pasta I’ve known from visiting the grocery store and checking out the aisles, but others I was able to find on allrecipes to help me fill in the gaps.

What is pasta made from?
Pasta is most commonly made from semolina, which is a flour made from durum wheat. It has a signature yellowish color and is sticky in texture when cooked.
Most packaged pasta you find at grocery stores will have either semolina flour, enriched wheat flour, or durum wheat flour on the ingredients list.
These are all refined flours, meaning they’re high in carbohydrates with a lower protein content than some other pastas made with different ingredients.
In addition to flour, pasta is often made with water and sometimes eggs. Manufactured dried pasta you can buy from the store may also have additional ingredients, like vitamins and minerals that are added to help preserve the pasta and enrich the product to add more nutritional value to the final product.
While most traditional pasta is made with semolina or durum wheat, there are other types of pasta available on the market these days. You can find pasta made with a number of different flours and even made from beans.
These pasta alternatives are generally higher in protein and offer more nutritional value than a traditional pasta might. Many of them are also gluten-free.
What is gluten?
Gluten is a protein found in most wheat products, and acts as the “glue” that helps to hold wheat, barley, kamut, spelt, farro, durum, bulgur, rye, and semolina together to maintain their shape.
Gluten is naturally occurring, and therefore is impossible to strip away from the grain. If a grain naturally has gluten in it, there’s no way to make that food gluten-free.

Is semolina gluten-free?
Semolina is a type of flour that’s made from durum wheat. This wheat is milled, then ground into semolina. It has a signature pale yellow color after being milled that we associate with semolina.
Semolina is most popularly used in making pasta. Couscous, pizza, and many other Italian, Indian, and Middle Eastern dishes.
Since semolina is made from durum wheat, it is not a safe choice for those of us on a gluten-free diet. This grain contains gluten and it can’t be removed no matter how much processing is done to it.

Is pasta gluten-free?
Most pasta, or at least traditional pasta, is not gluten-free as it is made with semolina flour or durum wheat flour. Any pasta product that lists semolina, durum wheat, or enriched wheat flour as ingredients contain gluten.
Other types of pasta may be gluten-free, but it’s up to you to look for a gluten-free label on these products as well as read through ingredient lists.
A gluten-free label will tell you the product contains less than 20ppm of gluten and if the product you’re looking at doesn’t have that, it’s worth reviewing ingredients for any hidden gluten names.

Is pasta dairy-free?
If you avoid dairy in addition to gluten, you’ll be pleased to know that most pasta is safe for a dairy-free diet as it doesn’t contain any dairy products. The pasta itself is almost always gluten-free, but filled pastas you’ll want to keep your eyes out for.
Tortellini, ravioli, and gnocchi come to mind as pasta options that may contain cheese ingredients and therefore should be avoided on a dairy-free diet or made at home in your kitchen with ingredients you know are dairy-free.
Another thing to keep in mind is that while the pasta itself may be dairy-free, the other ingredients in a dish need to be dairy-free as well for it to work with your dairy-free diet. That includes cream sauces and cheese in sauces or sprinkled on top.
Be aware of what the ingredients are in a dish before ordering or making it at home if you want to stick with your dairy-free diet.
What is gluten-free pasta made from?
It will vary from brand to brand as to what ingredients are used to make gluten-free pasta. Some brands try to make pasta taste and have a texture as close to semolina pasta as possible. In these pastas, you’re most likely to find corn and rice as the main ingredients.
In other pasta options, you might find pasta noodles made from brown rice, white rice, quinoa, chickpeas, lentils, cassava, almond, buckwheat, black beans, amaranth, and millet flours.
Many of the gluten-free pastas you’ll find have a mixture of one more or more of these types of flours to make a unique flavor and texture profile.
Now that we know what gluten-free pasta is made from, let’s go through some popular questions and answers about different types of pasta and find out if they are considered safe for a gluten-free diet.
Is whole wheat pasta gluten-free?
Whole wheat pasta is not gluten-free, as the main ingredient is wheat. Whole wheat or enriched wheat, a wheat based pasta contains gluten and should be avoided on a gluten-free diet.
Is spaghetti gluten-free?
Most spaghetti brands contain gluten as they’re made from semolina or durum wheat flour. These spaghetti brands are not gluten-free, so consider looking for a brand that’s made with a gluten-free flour instead.

Are lasagna noodles gluten-free?
Most lasagna noodles that are sold at grocery stores are made using semolina, which is wheat. In order to have a gluten-free lasagna, you’ll need to use specific gluten-free lasagna noodles.

Is angel hair pasta gluten-free?
Angel hair pasta is a thinner noodle pasta that’s similar to spaghetti. It’s made with semolina or durum wheat like other types of pasta.
You’ll want to look for a specific gluten-free brand of angel hair pasta to make sure you’re using an ingredient that works for your gluten-free diet.
Is tortellini gluten-free?
Most tortellini is not gluten-free as the pasta dough usually contains semolina or enriched flour, which contains wheat.
It is possible to make your own gluten-free tortellini with homemade gluten-free pasta dough. Or you can look for a gluten-free brand of tortellini from the store and enjoy the delicious flavors of tortellini without having to make your own pasta.

Is orzo gluten-free?
Orzo is not gluten-free, because it is made of semolina flour. Semolina flour is made from wheat, which contains gluten.
Although this small pasta looks like rice, you’ll want to be aware of this ingredient so you don’t accidentally eat it on your gluten-free diet.
Some brands make gluten-free orzo options. You can look for one of these options next time you’re in need of this ingredient for a dish:

Is couscous gluten-free?
Couscous is made from semolina, which contains wheat. Wheat contains gluten, therefore couscous is not gluten-free.

Is vermicelli gluten-free?
In the United States, vermicelli is generally not gluten-free. When we talk about vermicelli, it’s often to reference the pasta noodles that are thin and short, almost like broken spaghetti noodles.
If you are looking at a type of rice noodle or cellophane noodles that say “vermicelli” on the package, it’s a good idea to review the ingredients for flour or wheat references, as these will indicate the presence of gluten in the product.

Are egg noodles gluten-free?
Egg noodles are most often not gluten-free as they contain wheat flour. Unless you are able to find a gluten-free version of egg noodles from the store, you might opt to make your own egg noodles at home using gluten-free flour.
