Gluten-free bagels can be made of a number of different gluten-free flours, and many of them are made with a combination of them.
For most recipes and brands you come across, you’ll find gluten-free bagels are made with brown rice flour, sorghum flour, buckwheat flour, tapioca starch, potato starch in some combination.
For the most part you won’t find bagels made with just one type of flour but a combination. This is because each type of flour brings its own specific texture and good qualities.
For example, brown rice flour is great for bagels because it’s light and fluffy and not too dense. But if this ingredient was used on its own, the bagel could turn out gummy and not have the right consistency.
In this case, it would be better if it were balanced out with a mixture of tapioca flour or potato flour to give it a lightness and an overall better texture and consistency.
