Where gluten hides in chicken soup
When you’re buying soup at the store, there are a few places you’ll want to be on the lookout for gluten. The most obvious place gluten can be found in chicken soup is in noodles. Many chicken noodle soups from the store use noodles made from semolina flour which contains gluten.
Another place gluten might be found in chicken soup is in the broth. Many chicken (and other flavors of) broth contain gluten as a thickener and to help with texture. To find this, you’ll want to review ingredients lists for any words like “flour,” “wheat flour,” or other hidden names of gluten.

Finally, the other main spot to look for gluten in chicken soup is in chicken bouillon. This ingredient doesn’t always contain gluten, but it often does. Many chicken bouillon options do contain gluten or do not disclose whether or not there is gluten in their products.
Without a gluten-free label, you can read ingredient lists and see whether or not a product has gluten-containing ingredients, but will not know if the product is made on shared equipment or has the possibility of cross contamination.

One of my little secrets is that I carry around a copy of my GFDF Take Along Cards so that I always have a point of reference when I can sneak a peek at the ingredient list of a food.
How to make sure homemade chicken soup is gluten-free
At home when you make chicken soup using a recipe, the noodles and broth are also the main places you’ll want to be aware of to keep your chicken soup gluten-free.
Opt for gluten-free noodles in your gluten-free chicken soup. If a recipe you’re using calls for noodles that are not gluten-free, you can easily substitute this ingredient for a gluten-free version of this ingredient.
When buying chicken broth or stock, check ingredients lists for any hidden names of gluten and/or a gluten-free label. The gluten-free label will tell you if the brand has tested for gluten in their products.
If there are no gluten ingredients listed, but no gluten-free label, you can assume either 1) the brand doesn’t test for gluten, or 2) the brand knows about the potential for cross contamination and does not make any gluten-free claims on their products.
There’s no way to know without contacting the manufacturer which one of these options it is, so use your best judgment choosing a gluten-free broth or stock for your soups.
When reviewing recipes, be sure there are no other ingredients that contain gluten as well, like couscous or barley. If you find recipes that call for these ingredients, make some easy gluten-free swaps like quinoa or millet to add to your soup instead.
