I’ll tell you as I was going through creating this roundup for you, I was reminded of making peanut butter cookies with my mom and sister when I was a kid.
There was always tins of peanut butter, sugar, and eggs.. and yeah, all those ingredients are gluten and dairy-free. And yep, you’ll find a couple recipes that look like that in this roundup.
But the thing that struck me most while looking through lots of other recipes is how easy it is to up-level this classic cookie into something healthier and better for you.
You can add some oats for some healthy whole grain fiber. You can make them without eggs if you’re doing an egg-free diet too. You can swap out the refined white sugar for maple syrup.

You can even add a little chickpea flour or coconut flour to boost the protein in your cookies. Seriously, with so many easy swaps, you can have a super-healthy-but-still-tastes-like-a-treat peanut butter cookie even on a gluten-free dairy-free diet.

I’ve been buying the peanut butter from the bulk area of my local grocery store for a couple years now – and I seriously LOVE it. You just stick a little plastic tub underneath the grinder, push the button, and watch it grind the peanuts into the tub (and sometimes smack the container if things get stuck – ha!).
What’s great is that I only buy a small tub at a time, and there are NO added oils, sugars, or any preservatives – which I really appreciate.
Of course, there are other really great peanut butter options on the market – look for those with the least amount of ingredients. What do you need in peanut butter? Peanuts. That’s about it.
Here’s the backup peanut butter I keep on hand for if the grinder runs out at my grocery store.
So dig into this batch – I’ve rounded up some classic peanut butter cookies, some peanut butter chocolate chip cookies (my favorite!), healthier peanut butter cookies, and some peanut butter oatmeal cookies for those of you who like a little more texture in your cookies.
I’ve also added a few Top 10 resources for you throughout the post to make sure you’ve got everything you need on hand to make a batch any time you need to send something to an event or make them for a birthday, so be on the lookout for those throughout the post!
