I’ve been a menu planner since I was in college. I remember as a kid watching my mom tirelessly menu plan each and every week to try to save the family money, but also keep all our bellies full and happy.
Years later, I’m still an avid menu planner and thought it would be fun to share a fall menu plan with you that I’ve put together. Keep in mind that the meals I’m sharing are not recipes of my own. You can see that a number of root vegetables and grains made it to my plan. I also tend to eat more meat and animal protein in the fall and winter than I do in the summer – hence the eggs and a little more chicken and fat from the coconut milk. I love eating hearty, filling yet incredibly flavorful meals this time of year.
